Vada pav canapes
Vada pav is a popular street food from the states of Maharashtra. Usually vada pav is prepared by deep frying potato balls coated with besan mixture and then stuffed inside the bun and then topped with chutneys. But, here classic 'vada pav' is twisted with 'vada pav canapes'. This easy and lip smacking dish is prepared by stuffing potato mixture in oven baked bread canapes and then topped with garlic chutney.
Quick recipe tip -
1. Adjust spices according to taste.
Ingredients for stuffing -
9-10 potatoes boiled and mashed
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1/2 tsp carom seeds
To taste salt
1/2 tsp red chilli powder
1/2 tsp turmeric powder
1/2 tsp coriander powder
1 tsp chat masala
1 tsp lemon juice
1/2 tsp ginger grated
1/2 tsp garlic minced
1/2 tsp green chilli paste
3-4 tbsp coriander leaves chopped
For garlic chutney -
1 tsp mustard oil
1 dry red chilli
1 tbsp garlic cloves
2 tbsp coconut powder
To taste salt
Other ingredients -
6-7 slices brown bread
As needed melted butter
As needed mint chutney
Method for garlic chutney -
1. Heat mustard oil in a tadka pan on slow flame. Add dry red chilli and garlic cloves. Saute it on slow flame.
2. Add coconut powder and cook on slow flame till golden. Switch off the flame. Let it cool completely.
3. Add this mixture in a grinder jar.
4. Grind it to a fine powder.
5. Remove it in a bowl and mix salt.
6. Garlic chutney is ready. Keep aside till use.
7. Method for stuffing - In a wok heat oil. Add mustard seeds, cumin seeds, carom seeds, ginger, garlic and green chilli paste. Let it splutter for a second. Switch off the flame.
8. Add salt, red chilli powder, turmeric powder, coriander powder and chat masala. Mix well.
9. Add potatoes, lemon juice and mix well.
10. Add coriander leaves and mix.
11. Mix everything well. Stuffing is ready. Keep aside till use.
12. Method for bread canapes - Take bread slices. Cut each slice in round shape with katori.
16. Preheat oven at 180°C for 10 minutes. Place the tray with bread slices inside the oven and bake for 10-15 minutes or until the bread is golden and crispy.
17. Remove it from the oven and let it cool. Bread canapes are ready.
18. Method for serving - Take a canape. Spread mint chutney on it. Fill in the potato stuffing. Then sprinkle garlic chutney on the stuffing.
