Okra tawa fry

 Okra tawa fry 


Stuffed okra fry is a spicy and flavourful side dish. It is prepared by deep frying technique tossed with flavoured spices and packed with chat masala. 

Ingredients -

1/2 kg okra/ bhindi

For stuffing -

5 onion

2-3 green chilli

10 garlic cloves

1 cup tomato puree/ 4 tomatoes puree

To taste salt

1 tsp Garam masala 

1/2 tsp Coriander powder

1/2 tsp turmeric powder 

1/2 tsp kashmiri red chilli powder

3-4 tbsp mustard oil

For tawa masala -

2 tsp chaat masala

1/2 tsp red chilli powder

1 tsp salt

1/2 tsp cumin powder

For serving -

1 tsp butter

2 tbsp ready masala mixture for stuffing

1 tbsp ready tawa masala

1 tbsp lemon juice 


Method -

1. Wash and cut okra from top and bottom. Make slit lengthwise in the middle. Keep aside. 


For frying -

1. Fry okra for 2-3 minute in small batches in medium hot oil. 


2. Remove it on the plate.


For tawa masala -

1.Mix chaat masala, cumin powder, red chilli powder, salt in a bowl. Mix well. Tawa masala is ready.


For paste -

1. Add onion, green chilli and garlic in mixer grinder. 


2. Grind it to a coarse paste. Don't add water.


For stuffing mixture -

1. Heat oil in a wok. Add onion paste.


2. Fry till the moisture evaporates.


3. Fry till golden and cooked. 


4. Add tomato puree. 


5. Mix and fry for 3-4 minute.


6. Add salt, garam masala, coriander powder, turmeric powder, kashmiri red chilli powder. Mix well.


7. Mix well and cook on medium flame for 2-3 minute.


8. Cover and cook till tomato puree is properly cooked.

9. 
Stir and cook till oil separates from the mixture or the mixture is properly cooked.

10. Switch off the flame. Masala mixture for stuffing is ready.

11. Take it out in a bowl and let it cool. 

Preparing for tawa fry -
1. Sprinkle ready tawa masala on the fried okra. Mix well.

2. Stuff the okra with ready masala mixture. (At this stage stuffed okra can be stored in fridge for 2-3 days).

For serving -
1. Heat butter on a griddle or wok. Place ready okra on tawa for fry. Add ready masala mixture on it. 

2. 
Sprinkle tawa masala and mix. Switch off the flame. Add lemon juice and mix.

3. Transfer to a serving plate. Serve hot.
