Chole bhature
Chole bhature is one of the most popular Punjabi cuisine loved by everyone. Chole bhature is originated from Northern India.

Lip smacking combination of chana masala and bhatura (deep fried soft and fluffy maida bread). Chole bhatura is a complete meal in itself, accompanied with onion, green chili, pickle and mint chutney. Normally chole bhature is served in breakfast, lunch or it can be made on weekends.
Ingredients for chole masala -
500 gram White chana (soaked overnight)
4-5 tbsp Oil
1 Dry red chilli
1/2 tsp Cumin seeds
1 Onion chopped
1 green chilli grated
1 tsp Ginger garlic paste
1 cup Tomato puree
1 tsp Red chilli powder
1/4 tsp Turmeric powder
1 tsp Coriander powder
1/2 tsp Cumin powder
1/2 tsp Dalchini powder
1/2 tsp Chat masala
1 tsp Chana masala
To taste Salt
1/2 tsp Garam masala
1 tbsp Tamarind paste
800 ml water
Ingredients for bhature -
2 cup Maida
1 tbsp Suji
1 tsp sugar
To taste Salt
1/2 tsp Baking powder
1/4 tsp Baking soda
4 tsp Oil
7 tbsp or as needed Curd (little sour)
Other ingredients -
As needed maida for dusting
As needed oil for deep frying
Method for chole masala -
1. Take white chana in a big bowl. Wash and soak them in water overnight. In the morning, wash white chana properly with water. Drain it and keep aside.
2. Heat oil in pressure cooker. Add dry red chilli, cumin seeds and saute for few seconds. Add onion, green chilli and fry till golden. Add ginger garlic paste and fry for few seconds.
3. Add tomato puree. Cook on slow flame for 5-10 minutes or till the puree is cooked properly.
4. Add red chilli powder, turmeric powder, coriander powder, cumin powder, chat masala, dalchini powder, chana masala, garam masala and salt. Mix well.
5. Mix well. Keep cooking on slow flame. Cover and cook for 4-5 minute. Cook well till puree is properly cooked.
6. Add tamarind paste. Mix well for 2 minutes.
7. Add soaked and drained white chana. Mix well with spices.
8. Add water and mix well.
9. Cover the pressure cooker with lid and cook for 9-10 whistles on medium flame. Switch off the flame.
10. Let the pressure release by itself before opening the cooker. Open the cooker and mix Chole Masala. Mash few chole with the back of the ladle and mix well.
11. Chole masala is ready.
Method for bhature -
1. In a big bowl add maida, suji, sugar, salt, baking powder and baking soda. Mix well. Add oil and mix it well with flour.
2. Now add curd little by little and mix.
3. Keep mixing and knead the dough. Knead it for 5-6 minutes.
4. Grease the bhatura dough with little oil and cover with a moist/ wet cloth. Keep aside for 2 hours.
5. After 2 hours knead it again.
6. Take a small ball from the bhatura dough. Dust it with flour.
7. Roll the small bhatura dough in oval/ round shape like bhatura with rolling pin. Roll bhatura should not be too thick or too thin.
8. Heat oil in a wok for deep frying. Add bhatura, fry on medium slow flame. Splash oil and keep pressing the bhatura lightly with spatula it will puff up completely.
9. Change the side and fry bhatura on high flame till golden.
10. Remove the bhatura from the wok and place it on the tissue paper. Bhature are ready.
11. Serve hot with Chole masala, chopped onions and pickle.
