 Instant spinach uttapam/ Instant palak uttapam/ Spinack pancake 


Spinach uttapam is a simple, quick, easy, healthy, nutritious and vegan crepe dish prepared using multi-grain wheat flour mixed with spinach puree and veggies. This recipe does not require any fermentation. This is a zero oil recipe.

Quick recipe tip -

1. Adjust spices according to taste.

2. Uttapam batter should neither be too thick nor too thin.

3. Zero oil recipe... No need to add oil.

4. Add veggies according to your choice.


Ingredients -

1 cup spinach/ palak 

1 cup (+ more if required) water

1 cup multigrain wheat flour

1/2 tsp salt

1 green chilli

1/2 inch ginger

1 onion finely chopped

1 grated carrot

4 tbsp coriander leaves chopped 


Method -

1. Take a mixer jar. Add spinach, salt, green chilli in it. 


2. Add water little by little and grind it to a smooth puree. Spinach puree is ready. 


3. Take multigrain wheat flour in a bowl. Add spinach puree little by little and mix with whisker.


4. Whisk well till the batter is smooth and lump free.


5. Add few tbsp water if the batter is too thick.


6. Add grated carrot, onion and coriander leaves in a bowl. 


7. Mix in the batter.


8. Heat tawa/ griddle on slow flame. Clean the tawa with cloth. Pour a ladlefull of uttapam batter on it and spread in circle. Keep cooking on slow flame till the top dries up. 


9. Keep cooking on slow flame. Flip the side. 


10. Cook both sides till golden. 


11. Instant spinach uttapam is ready.


12. Transfer to a serving plate and serve hot with aloo palak, salad or can be eaten with tomato ketchup.
