 Scrambled tofu with spinach 


Vegetarian and vegan scrambled tofu with spinach is a quick, easy, healthy and flavourful recipe. It is a delicious combination which is prepared in 30 minutes. This recipe can be served as a side dish with rice, chapati and dal OR can be  used as a stuffing. 


Quick recipe tip -

1. Adjust spices according to taste.

2. Wash and finely chop spinach.

3. Crumble tofu with fingers or fork.


Ingredients -

1 pkt soft tofu 

2 cup spinach/ palak finely chopped

2 tbsp sesame oil

1/2 tsp cumin seeds

1 tsp garlic minced

1 tsp ginger grated

1 green chilli

1 onion chopped

1/2 cup tomato puree

To taste salt

1/2 tsp red chilli powder

1/4 tsp turmeric powder

1/2 tsp coriander powder

1/2 tsp sesame seeds

1/2 tsp garam masala 

Method -

1. Take tofu in a plate.


2. 
Crumble tofu with fingers or fork and keep aside.


3. 
Heat sesame oil in a wok. Add cumin seeds, ginger, green chilli, garlic. Saute till golden. Add onion and fry till golden.


4. Add tomato puree and mix well on slow flame. Add salt, red chilli powder, turmeric powder, coriander powder and mix well on slow flame.


5. Cook on slow flame stirring in between till tomato puree is properly cooked.


6. Add finely chopped spinach. Mix well.


7. Cover and cook on slow flame for 5-10 minutes. Stir in between.


8. Open the lid add garam masala and mix well. Cook for 2 minutes on slow flame.


9. Add crumbled tofu. Mix well on slow flame. 


10. Cook for 2 minutes. Switch off the flame. 


11. Scrambled tofu with spinach is ready.


12. Transfer to a serving plate. Serve hot.
