Potato curry
Quick recipe tip -
1. Adjust spices according to taste.
Ingredients -
2 tbsp mustard oil
1 tsp cumin seeds
1 tsp garlic grated
1 tsp ginger minced
1/2 tsp green chilli paste
1 onion chopped
1/2 cup tomato puree
To taste salt
1/2 tsp turmeric powder
1/2 tsp coriander powder
1/2 tsp cumin seed powder
1/4 tsp red chilli powder
1/2 tsp garam masala
1/4 cup methi puree
10 potatoes chopped
1/2 cup + 3 cup water
Method -
1. Heat oil in pressure cooker. Add cumin seeds, garlic, ginger, green chilli paste and let it splutter for a second. Add onion and fry till golden.
2. Add tomato puree, salt, turmeric powder, coriander powder, cumin seed powder, red chilli powder and garam masala. Mix well.
3. Cook till tomato puree is properly cooked or the moisture from the tomatoes dries up.
4. When tomato puree is cooked properly add 1/2 cup water and methi puree. Mix well.
5. Cook on slow flame for few minutes.
6. Add potatoes and mix well.
7. Add 3 cup water and mix.
8. Cover and pressure cook on high flame for 4 whistles. Switch off the flame. Let it cool.
9. Add coriander leaves and mix.
10. Potato curry is ready.
11. Serve hot with poori and raita.
