5 minutes Microwave fruit cake with Chocolate sauce 


Ingredients for fruit cake - 

Maida 1-1/4 cup 

Cocoa powder 3 tbsp

Baking soda 1/2 tsp

Sugar 1/2 cup

Oil  4 tbsp

Honey 4 tbsp

Tutti fruity  1/2 cup

3 tbsp Nuts (almonds & walnuts) 

Water 1/2 cup 

For chocolate sauce - 

Cocoa powder 3 tbsp

Jaggery powder 6 tbsp

Water 1/2 cup

Dairy milk chocolate (small) 1 pieces 

Vanilla essence 1/2 tsp

Chocolate chips 1 tbsp 


Method for fruit cake - 

1. Take water in a microwave safe glass and heat it until water is hot.

2. In a bowl add tutti fruity and nuts. 


3. Soak it in water for 5 minutes. 


4. After 5 minutes...


5. In a bowl add sugar, oil, honey and mix well. 


6. Now take the soaked fruits and nuts in a big bowl and add in sugar, oil mixture. 


7. Mix well. Add vanilla essence. 


8. In the mean time take maida, cocoa, baking soda  in a bowl and mix well. 


9. Add the maida mix into nuts sugar mixture and mix well. 


10. Mix gently. 


11. Take microwave safe bowl grease it well and dust it with flour. 


12. Now pour the batter in the bowl, don't fill too much just half the bowl.


13. Put it in micro and cook for 5 minutes.

14. When it is cooked switch off the microwave. Leave the cake in microwave for 5 minutes (standing time). 

15. Remove it from microwave. Allow it to cool down. 


Method for chocolate sauce - 

1. In a heavy bottom pan mix cocoa powder and jaggery powder. 


2. Add water little by little and whisk it very well. 


3. It should be a lump free mixture. 


4. Heat the pan on slow flame. Keep stirring continuously. 


5. Cook for 7-8 minutes or until the sauce becomes smooth and silky. 


6. Add dairy milk chocolate and mix well or until the chocolate melts completely. Switch off the flame. 


7. Place the pan on the kitchen top. Add vanilla essence and mix well. Mix continuously for 4-5 minutes. 


8. Let it cool completely. Chocolate sauce is ready to use. 


For serving - 

1. Place fruit cake in a serving plate  and pour chocolate sauce on it. Garnish with chocolate chips.

Aloo dosa/ Potato dosa

 Aloo dosa/ Potato dosa 


Recipe notes -

1. Grind boiled potatoes by adding 1 cup of water.

2. After adding mixing ingredients...  the consistency of the batter should be watery. 


Ingredients for potato batter -

3 potato boiled (chopped)

1 cup water

For mixing -

1-1/2 cup rice flour

1/4 cup semolina/ suji

To taste salt

5 cup water

Other ingredients -

1 onion (finely chopped)

3-4 tbsp coriander leaves (finely chopped)

1 chilli grated

1 tsp cumin seeds

As needed cooking oil 


Method for potato batter - 

1. In a mixer jar add chopped and boiled potatoes. 


2. Add water little by little and grind it to a smooth batter.


3. Remove this potato batter in a bowl.

Method for mixing -

1. Add rice flour, suji and salt in potato batter.


2. Mix well.

3. Add 5 cup water little by little and mix. 


4. Mix to a smooth lump free batter.

5. Consistency of the batter is watery. 


6. Add onion, green chilli, coriander leaves and cumin seeds. 


7. Mix everything well.


8. Cover and let it rest for 10 minutes.

9. After 10 minutes check the consistency. It should be watery. Add little more water if required. Potato dosa batter is ready.


10. Heat tawa/ griddle until fully hot. Pour batter on it. Drizzle oil on it. Let it cook for 2-3 minutes or until it turns golden. 


11. Change the side and cook for few more minutes.


12. Potato dosa is ready. Fold it.


13. Place it on the serving plate. 

14. Serve hot with sambar and chutney.

Aloo pudina idli (Potato mint idli) is a healthy and tasty variation to the traditional idli. It is unique and differently flavoured.

Idli chaat is a spicy, tangy and delicious fusion dish of North and South Indian cuisine. It is a unique and lip smacking dish made from leftover idlies. But, today I prepared this recipe with unique idlies which are made with potato, mint, suji and curd. Idli chaat is served as an evening snack or can be consumed as an appetizer. 

Quick tips -

1. Take raw potatoes. Wash it, peel it and chop it.

2. Instead of eno... 1 tsp baking powder can be added.

3. Whisk curd properly. 

4. Adjust spices to taste.  


Ingredients for potato batter -

2 potatoes chopped

2-3 green chilli

4 tbsp mint leaves chopped

2-3 tbsp water 

For mixing - 

1 cup suji

1/2 cup curd

1/4 cup water

To taste salt

1 tsp chilli flakes

1 tsp sambar masala powder

3- 4 tbsp coriander leaves chopped

1 small packet (1 tsp) Eno

1 tbsp water 

For tempering -

2 tsp cooking oil

1 tsp white urad dal

1 tsp mustard seeds 

For serving -

2-3 cup curd

To taste salt

1/2 tsp red chilli powder

1/2 tsp cumin seeds powder

1/2 tsp chat masala

1 tbsp tamarind chutney

1 tbsp mint chutney

1 tbsp onion chopped

1 tbsp mint leaves chopped

1 tbsp masala boondi 


Method - 

1. Take a mixer jar. Add chopped potatoes, mint leaves and green chilli. Add water and grind it. 


2. Grind it to a smooth batter.

3. Take a mixing bowl. Add suji and curd. Mix. 


4. Add potato batter and mix. 


5. Add water and mix well. 


6. Cover and keep aside for 15- 20 minutes. 


7. In a small pan heat oil. Add urad dal, mustard seeds and let it splutter for a second. Switch off the flame and let it cool completely. Tempering is ready. 


8. After 20 minutes add tempering on the batter. Add salt, chilli flakes, sambar masala powder and coriander leaves. Mix well. 


9. Before steaming the idli add eno and 1 tbsp water. Mix well. 


10. Batter will become frothy. 


11. Grease idli moulds properly. Heat little water in the idli cooker. Pour batter in the greased  idli moulds. 


12. Place idli stand in the cooker and cover it with lid.  Steam for 15 minutes on high flame. Switch off the flame and let it sit for 5 minutes. 

13. Open the lid. Perfectly steamed idlis. 


14. Remove the idlis out from the moulds. 


15. Place it in the bowl. 



For serving -

1. Cut idlis. Place it in serving plate. 


2. Sprinkle salt, red chilli powder, chat masala and cumin seeds powder. Pour tamarind chutney and mint chutney on top. Garnish with mint leaves and onion. Top with masala boondi. 


3. Serve immediately.
