Quinoa orange muffins

 Quinoa orange muffins 


Lightly sweetened with powdered sugar, infused with loads of dry fruits and fresh juice, then mingled with quinoa flour and multigrain wheat flour makes it a perfect healthy snack. This recipe yields 15 muffins.


Quick tips for making quinoa flour

1. Incase 'quinoa' is not pre-rinsed then rinse quinoa with water and sun-dry it completely. Then dry roast it in a wok. Let it cool. Grind it.  Quinoa flour is ready.

- If quinoa is pre-rinsed then dry roast it and let it cool. Grind it to a fine powder. Quinoa flour is ready.

2. For flax egg mix 1 tbsp Flax seed powder + 3 tbsp water. Mix in a small bowl and allow to sit for 10 minutes. 


Dry ingredients 

1 cup quinoa flour

1 cup multi-grain wheat flour

1/2 cup powder sugar

1-1/2 baking powder

1 tsp baking soda

Pinch salt 

Wet ingredients -

1/3 cup cooking oil

1 Flax egg 

1/4 tsp orange zest (optional)

1/3 cup orange juice

3/4 cup milk

1 tbsp honey

1 tbsp white vinegar 

Other ingredients -

1/2 cup + 2 tbsp mixed dry fruits finely chopped 


Method -

1. In a mixing bowl add dry ingredients quinoa flour, wheat flour, powder sugar, baking powder, baking soda, salt. Mix well and keep aside.


2. In small bowl add 1 tbsp Flax seed powder + 3 tbsp water. Mix in a small bowl and allow to sit for 10 minutes. Egg replacer is ready.


3. In another bowl add wet ingredients cooking oil, flax egg, orange juice, orange zest and mix well. Add milk, honey, white vinegar and mix well.


4. Mix milk orange juice mixture with quinoa wheat flour mixture. Mixture will be thick in consistency.


5. Add finely chopped dry fruits.


6. Mix well.


7. Add batter in greased silicone molds. Top it with finely chopped dry fruits.


8. Preheat oven at 180°C for 10 minutes. Place muffin molds in preheated oven and bake at 180°C for 20 minutes. Check with toothpick.


9. Take out muffin molds and let it cool.


10. Take our quinoa orange muffins from the mould and place in the serving plate. 


11. Quinoa orange muffins are ready to eat.

Tandoori potato tornado

Tandoori potato tornado is a quick, easy and lip smacking dish. This is a magic dish which is a great appetizer,  can be served as a side dish or eaten as an evening snack. It is one of the tastiest and unique dish which is prepared by roasting marinated potato spirals on direct flame. The process of roasting makes this dish more healthy and flavourful.

Quick recipe tip -

1. Adjust spices according to taste.


Ingredients -

6 small potatoes 

For tandoori batter -

1/2 cup thick curd

2 tbsp besan

To taste salt

1/2 tsp red chilli powder

1/2 tsp coriander powder

1/4 tsp turmeric powder

1 tsp tandoori masala

1 tsp sesame oil

1 tsp garlic minced

1/2 tsp green chilli paste

Pinch of red food colour/ grated beetroot (optional) 

For garnishing - 

1/2 lemin juice

1/2 tsp chat masala 

Method -

1. Wash and clean potatoes properly. Cut it in spiral. 


2. In a mixing bowl add curd, besan, salt, red chilli powder, coriander powder, turmeric powder, tandoori masala, red food color or beetroot, sesame oil, garlic, green chilli paste. 


3. Mix well. It should be like a smooth lump free batter.


4. Add potatoe spirals and mix gently. Keep aside for 20 minutes.


5. After 20 minutes arrange potato tornado on a skewer.


6. Roast potato tornados on direct flame.

7. Tandoori potato tornados are ready.


8. 
Transfer to a serving plate. 

9. Sprinkle with chat masala and lemon juice. Serve hot as a side dish or can be eaten as evening snack.

 Tamatar ka chokha/ Tomato chokha 


Tomato chokha is a smoky bharta which is served with little chokha is a popular cuisines of Bihar and Jharkand. Tomato chokha is a vegan, low fat and gluten free dish. It is prepared by roasting tomatoes on open flame then mingled with ginger garlic, green chilli, onion, coriander leaves and tossed with lemon juice and salt.


Quick recipe tip -

1. Adjust spices according to taste.

2. Incase you don't have wired grill place it directly on the flame.


Ingredients -

6 red tomatoes

2 tbsp mustard oil

1 tsp garlic cloves minced

1 tsp ginger grated

1/2 tsp mustard seeds

2 green chilli grated

1 onion chopped

3 tbsp coriander leaves

1/2 lemon juice

To taste salt 

Method - 

1. Wash tomatoes properly.


2. Keep tomatoes on the wired grill on direct flame.


3. Roast tomatoes from all sides. Keep turning the side of the tomatoes for even roasting. 


4. Cook tomatoes properly till they are completely cooked from inside and properly roasted black from outside on direct flame.


5. Place roasted tomatoes on the plate and let it cool a bit. 


6. When tomatoes are still warm remove the black skin from roasted tomatoes.


7. Place tomatoes in a bowl and mash it using fork. 


8. Heat mustard oil in a small pan. Add mustard seeds, ginger, garlic and saute for few second. 


9. Mix sauted ginger garlic and green chilli with mashed tomato. 


10. Add onion, coriander leaves, lemon juice and salt. 


11. Mix everything well. 


12. Tomato chokha is ready.


13. Transfer it to a serving bowl. Serve with littli chokha.

Vegetable fried rice

 Vegetable fried rice 


A flavourful vegan and gluten free delicious recipe of fried rice loaded with vegetables and aromatic spices. 


Ingredients -

1 tbsp sesame oil

1/4 tsp mustard seeds

1/4 cup green peas

1/2 cup spinach chopped

1 carrot chopped

1 capsicum chopped

1 onion chopped

1 boiled potato

1 tomato chopped

1 tsp green chilli paste

To taste salt

1/2 tsp red chilli powder

1/2 tsp turmeric powder

3 cup boiled rice

3 tbsp coriander leaves chopped 

Method with step photos -

1. In a bowl chop carrot, boiled potato, tomato, capsicum and onion.


2. In a wok add sesame oil, mustard seeds and green peas. Saute for few minute. 


3. Add spinach and mix well. Cook on slow flame for few minute.


4. Cover and cook on slow flame for 5-6 minutes. 


5. Open the lid and mix.


6. Add chopped vegetables and green chilli paste. Mix well.


7. Add salt, red chili powder, turmeric powder and mix well. 


8. Add boiled rice and mix well.


9. Add chopped coriander leaves.


10. Mix everything well.


11. Vegetable fried rice is ready. Transfer to a serving bowl. Serve hot.
