Tamatar ka chokha/ Tomato chokha
Tomato chokha is a smoky bharta which is served with little chokha is a popular cuisines of Bihar and Jharkand. Tomato chokha is a vegan, low fat and gluten free dish. It is prepared by roasting tomatoes on open flame then mingled with ginger garlic, green chilli, onion, coriander leaves and tossed with lemon juice and salt.
Quick recipe tip -
1. Adjust spices according to taste.
2. Incase you don't have wired grill place it directly on the flame.
Ingredients -
6 red tomatoes
2 tbsp mustard oil
1 tsp garlic cloves minced
1 tsp ginger grated
1/2 tsp mustard seeds
2 green chilli grated
1 onion chopped
3 tbsp coriander leaves
1/2 lemon juice
To taste salt
Method -
1. Wash tomatoes properly.
2. Keep tomatoes on the wired grill on direct flame.
3. Roast tomatoes from all sides. Keep turning the side of the tomatoes for even roasting.
4. Cook tomatoes properly till they are completely cooked from inside and properly roasted black from outside on direct flame.
5. Place roasted tomatoes on the plate and let it cool a bit.
6. When tomatoes are still warm remove the black skin from roasted tomatoes.
7. Place tomatoes in a bowl and mash it using fork.
8. Heat mustard oil in a small pan. Add mustard seeds, ginger, garlic and saute for few second.
9. Mix sauted ginger garlic and green chilli with mashed tomato.
10. Add onion, coriander leaves, lemon juice and salt.
11. Mix everything well.
12. Tomato chokha is ready.
13. Transfer it to a serving bowl. Serve with littli chokha.
