Watermelon rind keri salad/ Watermelon rind raw mango salad
Watermelon rind keri salad is a refreshing, flavourful and colourful salad recipe. It is a delectable, healthy and perfect recipe prepared using very simple and easily available ingredients.

Quick recipe tip -
1. Discard watermelon rind's green portion and use the white one.
2. Add lemon at the time of serving.
3. It can be served as a side dish with meal or can be eaten as evening snack.
Ingredients -
1/4 cup grated keri/ raw mango
1/4 cup keri/ raw mango finely chopped
1/2 cup watermelon rind grated
1/4 cup watermelon rind finely chopped
1 onion finely chopped
1 tomato finely chopped
1 cucumber chopped
2-3 tbsp coriander leaves finely chopped
To taste salt
1/4 tsp black salt
Pinch red chilli powder
1/4 tsp black pepper powder
1/2 lemon juice
Method -
1. In a bowl add grated keri and chopped keri.
2. In the same bowl grate watermelon rind. Mix well with keri.
3. Add onion, tomato, cucumber, chopped watermelon rind and coriander leaves.
4. Add salt, black salt, black pepper powder, red chilli powder.
5. Mix well and add lemon juice.
6. Watermelon rind keri salad is ready.
7. Transfer to a serving plate and serve.
