Vegetable fried rice

 Vegetable fried rice 


A flavourful vegan and gluten free delicious recipe of fried rice loaded with vegetables and aromatic spices. 


Ingredients -

1 tbsp sesame oil

1/4 tsp mustard seeds

1/4 cup green peas

1/2 cup spinach chopped

1 carrot chopped

1 capsicum chopped

1 onion chopped

1 boiled potato

1 tomato chopped

1 tsp green chilli paste

To taste salt

1/2 tsp red chilli powder

1/2 tsp turmeric powder

3 cup boiled rice

3 tbsp coriander leaves chopped 

Method with step photos -

1. In a bowl chop carrot, boiled potato, tomato, capsicum and onion.


2. In a wok add sesame oil, mustard seeds and green peas. Saute for few minute. 


3. Add spinach and mix well. Cook on slow flame for few minute.


4. Cover and cook on slow flame for 5-6 minutes. 


5. Open the lid and mix.


6. Add chopped vegetables and green chilli paste. Mix well.


7. Add salt, red chili powder, turmeric powder and mix well. 


8. Add boiled rice and mix well.


9. Add chopped coriander leaves.


10. Mix everything well.


11. Vegetable fried rice is ready. Transfer to a serving bowl. Serve hot.

 Sabudana thalipeeth/ Sago thalipeeth/ Tapioca pearls flatbread 


Sabudana thalipeeth is a popular maharashtrian snack. It is a healthy pancake recipe which is prepared using soaked sago pearls, boiled potatoes, crushed peanuts, spices and coriander leaves. Actually sabudana thalipeeth has the same ingredients used in sabudana vada. 

Recipe tip -

1. Incase sabudana thalipeeth breaks while making roti then it means the mixture is dry. Sprinkle little water and mix. Then make roties. 

2. If the mixture is sticky then add rajgira flour or singhara flour and mix. Keep adding the flours until the mixture becomes non-sticky and can be shaped easily in roti. 


Ingredients -

1 cup sabudana

3-4 boiled potatoes

1 green chilli

1/4 cup peanuts coarsely ground

To taste salt/ rock salt

1/2 tsp red chilli powder

1 tsp grated ginger

1/4 tsp turmeric powder

1/2 tsp ajwain

1/2 tsp coriander powder

4 tbsp coriander leaves chopped

1 tsp lemon juice 

Method -

1. Wash and rinse sabudana properly. Soak it in water for 3 hours. After 3 hours drain the water.

2. Add potatoes, green chilli, salt, red chilli powder, grated ginger, turmeric powder, ajwain, coriander powder, coriander leaves chopped, lemon juice and coarsely ground peanuts. Mix well.

3. Add sabudana and mix well. Sprinkle little water incase the mixture seems to be dry.

4. Place a foil paper on the kitchen top. Rub few drops of oil on the foil. Take small ball from the dough, place it on the greased foil and spread the ball lightly into a thin roti with your fingers. Make a hole in the centre.

5. Heat tawa on medium slow flame.  Slow the flame and drizzle few drops of oil on it. 

6. Take foil on your hands and put roti side down on hot tawa, take off the foil and drizzle oil on sides and over the roti and cook on slow flame till bottom side is light brown. 

7. Flip the side drizzle a tbsp of oil on sides and cook on medium high flame. Cook till both sides are golden and crisp.

8. Sabudana thalipeeth is ready.

9. Transfer to a serving plate. Serve hot with peanut chutney.

 Shakarkandi jaggery halwa/ Sweet potato jaggery halwa 


Shakarkandi halwa is quick, easy, healthy and delicious dessert. This sweet dessert is prepared by using boiled grated Shakarkandi, milk powder, jaggery and nuts. It can be served during fasting or anytime of the season. 


Ingredients -

2 cup boiled Shakarkandi grated/ mashed

1 tbsp + 1 tbsp unsalted butter

1 tbsp milk powder

1/2 cup powdered jaggery

1/4 cup + 1/4 cup water

2 tbsp chopped dry fruits 

Method -

1. In a wok add Shakarkandi and 1 tbsp butter. Keep cooking on slow flame stirring continuously.

2. Again add 1 tbsp butter and keep cooking on slow flame stirring continuously. 

3. Cook untill Shakarkandi turns golden. Add milk powder. Keep mixing on slow flame stirring continuously for 3-4 minutes.

4. Switch off the flame and add powdered jaggery. Mix well. Keep the wok on flame and cook on slow flame stirring continuously for 3-4 minutes.

5. Add 1/4 cup water. Mix well. Cover and cook on slow flame till water dries up. Stir in between. Add dry fruits and mix. 

6. Again add 1/4 cup water. Mix well. Cover and cook on slow flame till water dries up. Stir in between. 

7. Open the lid and keep stirring for 2 minutes. Switch off the flame. 

8. Shakarkandi jaggery halwa is ready. Transfer to a serving plate. Top with dry fruits and serve hot.

Dal moradabadi

 Dal moradabadi 


Dal Moradabadi is healthy and delicious dal prepared with yellow moong dal served as a snack or chat. This dal is originated from Moradabad (Uttar Pradesh). It is a gluten free dal. Dal Moradabadi tastes well when it is served hot.


Ingredients
1/2 cup yellow moong dal
1 tsp or to taste salt
1/2 tsp turmeric powder
2 cup water

For serving 
2 tbsp mint chutney
1 tsp cumin powder
1/2 tsp black pepper powder
1/2 tsp chat masala
2 tbsp soft butter
1 tsp lemon juice
2 tbsp coriander leaves chopped

Method

1. Wash and soak dal for 10 minutes. Add dal, salt, turmeric powder and water in a pressure cooker. Close the lid and pressure cook on high flame for 6-7 whistles. 

2. Switch off the flame and let it cool. Open the lid and mix dal with ladle. Dal should be mushy and semi thick in consistency. (Adjust consistency according to preference.) 

For serving

3. Pour dal in a serving bowl. Add cumin powder, black pepper powder, chat masala, mint chutney, butter and coriander leaves. 

4. Serve hot.
