Ghugni chaat

 Ghugni chaat 


Ghugni chaat is the most iconic street food of Bengal. Made of dried peas/ ghugni with tomato, onion, chilli, coriander leaves, tamarind chutney and pudina chutney which is turned into a spicy chatpata chaat. 


Quick tips -

1. Add spices to taste. 


Ingredients -

2 cup dried peas/ white peas/ ghugni

To taste salt

1/2 tsp turmeric powder

As needed water

Ingredients for tempering -

4 tbsp mustard oil

1 tbsp grated garlic

1 tsp ginger grated

1 green chilli grated

1 onion chopped

1 cup tomato puree

To taste salt

1/2 tsp red chilli powder

1/2 tsp coriander powder

1 tsp chat masala

For serving 

1 onion chopped

2 tbsp tamarind chutney

2 tbsp mint chutney

1 green chilli 

1 tbsp lemon juice 


Method

1. Wash and soak dried peas overnight. Drain it. 


2. Add dried peas, water and salt in the pressure cooker.


3. Close the lid and pressure cook on high flame for 5 whistles. Switch off the flame. Let it cool. 


4. Heat oil in wok. Add garlic and green chilli. Saute for few minutes.


5. Add onion and mix.


6. Fry till golden.


7. Add tomato puree. Mix.


8. Cover and cook on slow flame for 10-15 minutes stirring in between.


9. Add salt, red chilli powder, coriander powder and chat masala.


10. Mix well. 


11. Add ghugni.


12. Mix well and cook on medium flame till the consistency is medium thick.


13. Add lemon juice and mix. Switch off the flame.


14. Ghugni chaat is ready.


15. Transfer to a serving plate. Add onion, tamarind chutney, mint chutney, chilli and serve.

Dal moradabadi

 Dal moradabadi 


Dal Moradabadi is healthy and delicious dal prepared with yellow moong dal served as a snack or chat. This dal is originated from Moradabad (Uttar Pradesh). It is a gluten free dal. Dal Moradabadi tastes well when it is served hot.


Ingredients
1/2 cup yellow moong dal
1 tsp or to taste salt
1/2 tsp turmeric powder
2 cup water

For serving 
2 tbsp mint chutney
1 tsp cumin powder
1/2 tsp black pepper powder
1/2 tsp chat masala
2 tbsp soft butter
1 tsp lemon juice
2 tbsp coriander leaves chopped

Method

1. Wash and soak dal for 10 minutes. Add dal, salt, turmeric powder and water in a pressure cooker. Close the lid and pressure cook on high flame for 6-7 whistles. 

2. Switch off the flame and let it cool. Open the lid and mix dal with ladle. Dal should be mushy and semi thick in consistency. (Adjust consistency according to preference.) 

For serving

3. Pour dal in a serving bowl. Add cumin powder, black pepper powder, chat masala, mint chutney, butter and coriander leaves. 

4. Serve hot.

 Tangy bread roll chaat


Ingredients for outer covering :
4 slice bread

Ingredients for potato mixture :
5 boiled potatoes
1 chopped onion
1/4 cup coriander leaves chopped
Salt to taste
1/2 tsp red chilli powder
1/2 tsp chaat masala
1/2 tsp Ajwain

For deep frying :
Oil as needed

For serving :
Pudina chutney
Onion rings

Method :
1. In a bowl add potato, onion, coriander leaves, salt, ajwain, red chilli powder and chaat masala. Mix well.
2. Take a bowl fill with water. Dip in bread slice then squeeze out the water. Fill potato filling in the center. Close the sides properly. Rolls are ready.
3. Heat oil in a wok. Deep fry the rolls till golden. Take it out on the tissue paper.
4. In another bowl take onion rings and mix 2-3 tbsp pudina chutney. Mix well.
5. Take a serving plate. Place rolls in the plate and cut them into pieces.
6. Spread pudina chutney on it. Place onion rings on it.
7. Serve.

 Jhal muri bhel/ Murmura bhel


Jhal muri bhel also known as murmura bhel is a popular street food in many parts of India which is made with different variations. It is very quick, delicious and easy to make. It is a delectable chatpata snack prepared using murmura or puffed rice combined with peanuts, onion, potato, flavoured spices and tongue tickling chutneys. 

Ingredients -

2 cups Murmura/ Jhal muri

1 Fried Bread slice cut into cubes

1/2 cup Roasted peanuts

1 Onion chopped

1 Green chilli chopped

1 potato (peeled, washed, cut into cubes & deep fry)

To taste Salt

1 tsp red chilli powder

As needed Tamarind chutney

As needed Tomato Ketchup

As needed Pasta Sauce


Method -

1. In a mixing bowl add murmura, fried bread slice, roasted peanuts, onion, green chilli, fried potato and mix well.

2. Add salt and red chilli powder. Mix well. Add Tamarind chutney, Tomato Ketchup, Pasta Sauce and mix well.

3. Transfer to serving bowls and serve immediately.

Chatpate chana Chaat

It is a tasty, tangy, quick and easy chaat recipe. 


Ingredients for chana :

Boiled white chana : 4 cups
2 Green chilli grated
Salt to taste
Red chilli powder to taste
Chaat masala to taste
Chana masala to taste
Onion : 1 medium size (chopped)
Tomato : 1 medium size (chopped)
Imli paste : 2 tbsp heaped
Lemon juice : 2 tbsp

Method :

1. Drain boiled chana properly.
2. Take a big bowl add green chilli, onion, tomato.

3. Add boiled and drained chana.

4. Add salt, red chilli powder, chaat masala and chana masala.

4. Add lemon juice and imli paste. Mix well.

5. Transfer it to a serving bowl.

6. Serve.

Aloo Chaat – Street Style!!

Aloo Chaat – Street Style!!

It is a very popular street chaat made with fried potato wedges tossed with spices, chutneys and lemon juice. This aloo chaat is typically consumed during the evening as an appetizer or a starter.


Ingredients For Frying -

As needed Oil for deep/ shallow frying
1/2 kg Potatoes (wash, peel & dice them)


For Chaat -

1 onion chopped
1 green chilli grated
1 cup coriander leaves chopped
1 tbsp salt
1/2 tsp red chilli powder
1/2 tsp chat masala


For Garnish -

Imli chataka chutney
Watermelon rind chutney


Method -

1. Wash, peel and dice potatoes. 



2. Heat oil in a wok. Deep fry potatoes till golden. 


3. Drain them on tissue paper.


4. Take a bowl add fried potatoes in it. 

5. Add chopped onion, green chilli, coriander leaves, salt, red chilli powder, chat masala and mix well.



6. Add imli chutney, Watermelon rind chutney and mix well.
7. Transfer it to a serving plate. Spread a tbsp of imli & Watermelon rind chutney. 


8. Serve immediately.
