Golden apple sabzi
Golden apple sabzi is a humble, quick, healthy, easy and lip smacking dish. It is gluten free, vegan and nutritious. It is prepared by caramelizing sweet golden apples tossed with flavoured Indian spices and then combined with onion, tomato, ginger, fresh red chilli, capsicum and mint leaves for minty flavour.
Quick tips -
1. Adjust spices according to taste.
Ingredients -
1 onion chopped
2 fresh red chillies grated
1/2 tsp ginger grated
1 capsicum chopped
1 tomato (scoop out seeds and chopped)
1/2 cup mint leaves chopped
2 tbsp sesame oil
1 golden apple peeled and chopped
1/2 tsp mustard seeds
To taste salt
1/2 tsp red chilli powder
1/2 tsp coriander powder
1/2 tsp cinnamon powder
1/2 tsp chat masala
Method -
1. In a bowl add chopped onion, chopped capsicum, chopped tomato, mint leaves and grated ginger. Keep aside.
2. Heat oil in a wok. Add mustard seeds and let it splutter for a second. Add peeled and chopped apples.
3. Mix and fry on high till soft and golden in colour.
4. Add salt, red chilli powder, coriander powder, cinnamon powder and chat masala.
5. Mix well on slow flame.
6. Add all the veggies. Mix and cook for 3 minutes on slow flame stirring in between.
7. Splash 2 tbsp water. Mix. Cover and cook on slow flame for 5 minutes.
8. Switch off the flame. Mix. Again cover and keep aside for 2-3 minutes.
9. Golden apple sabzi is ready.
10. Transfer it to a serving bowl. Serve hot as a side dish with chapati, rice and dal.
