 Soya chunks vada/ Chutney vada... in appe pan 


A healthy version of Punjabi delicacy dahi vada. This recipe is prepared by grinding soya chunks, urad dal and moong dal. Instead of deep frying it is made in appam patra and dunked in coconut mint chutney. 

Quick tip -

1. Adjust spices to taste.

2. Soak both dals for 3 hours. 


Ingredients -

1/2 cup white urad dal

1/2 cup yellow moong dal

2 cup soya chunks

1 inch pc ginger

2 green chilli

1 tsp salt

As needed few tbsp of water

For coconut pudina chutney :

1 cup Coconut powder 

1/4 cup mint leaves

1/2 cup coriander leaves

2 fresh green chillies

1 inch pc ginger

4-5 garlic cloves

1 tsp tamarind paste

To taste salt

Water as needed 


Method -

1. Take moong and urad dal in a bowl.


2. Wash and soak moong and urad dal for 3 hours. 


3. Heat water in a big bowl. Add soya chunks and bring it to boil for 5 minutes. Switch off the flame.


4. Drain and squeeze out  water from soya chunks. Keep aside. 


5. Drain the water from dals. 


6. Take a mixer jar. Add both dals, ginger, green chilli and few tbsp of water. 


7. Grind it to a smooth paste.


8. Transfer it to a bowl and keep aside.


9. Add soya chunks in mixer jar. 


10. Grind it to a smooth paste. If needed add few tbsp of water.


11. Transfer it to the same bowl. Mix dal and soya paste well.


12. Mix dal and soya paste well.


14. Add salt.


15. Mix well. If required add few tablespoons of water.


16. Heat oil in appam pan. Drizzle few drops of oil in appam pan. Add a  spoonful of vada mixture in each cavity. 


17. Cover and cook on slow flame. 


18. Turn the flame on medium. 
Flip the side and again cook for few minutes.

19. Cook till both sides are golden.


20. 
Soya chunks vada are ready. 


Method for making chutney :

1. In a mixer jar add mint leaves, coriander leaves, green chillies, ginger, garlic, tamarind paste, salt and water.


2. Grind it to a smooth paste. 


3. Add coconut powder.


4. Grind it by adding more water to make it a pouring consistency.


5. Transfer it to a bowl. Keep aside.


6. Add more water if needed to make it a pouring consistency.


7. Coconut pudina chutney is ready.


 8. Take a serving plate. Pour chutney in the plate and then add Soya chunks vada in it.


9. Garnish with coriander leaves. Chutney vada is ready.
