Pineapple fried rice
Pineapple fried rice is a vegan, humble, delicious and mildly spiced exotic dish. It is a perfect combination of flavourful and nutritious ingredients to make a quick and easy one pot meal. It is both vegan and vegetarian friendly prepared by mixing crunchy nuts, caramelized pineapple and boiled rice.
Ingredients -
2-3 cup Boiled Rice
1 cup chopped pineapple pieces
3-4 tbsp oil
1/2 tsp mustard seeds
1 tsp garlic minced
1 Onion finely chopped
1/4 cup Cashewnuts
1/2 tsp black pepper powder
To taste Salt
1 tbsp red chili sauce
1 tablespoon Soy sauce
Method -
1. Heat oil in a wok. Add mustard seeds let it splutter for a second. Add garlic and onion. Stir fry till golden.
2. Add cashews and fry them for 3-4 minutes till golden.
3. Add pineapple pieces.
4. Stir fry pineapple pieces for 5-6 minutes.
5. Cook till the moisture dries up or till pineapple is caramelized.
6. Now add salt, black pepper and mix well.
7. Add soya sauce, red chili sauce and mix well.
8. Mix well.
9. Add boiled rice and mix well with the rest of the ingredients. Cook for 4-5 minutes stirring in between.
10. Mix well.
11. Switch off the flame and cover it for 10 minutes.
12. Pineapple fried rice is ready to serve.
13. Transfer pineapple fried rice to a serving plate.
14. Serve as it is or with raita of your choice.
