Homemade chocolate barfi
Ingredients for syrup :
1/2 cup water
2/3 cup sugar
1/4 cup soft unsalted butter
Dry ingredients :
5 tbsp cocoa powder
1-1/4 cup milk powder
For topping :
2 tbsp melon seeds or broken cashews
Method
1. Sieve milk powder and cocoa powder in a bowl.
2. Mix well in a bowl and keep aside.
3. Take water and sugar in a pan. Heat it on high flame till rolling boil.
4. Slow the flame and cook till it reaches one string consistency.
5. Add butter and mix well.
6. Keep mixing on slow flame till butter is well combined with syrup. Switch off the flame.
7. Take a round plate. Cover it with foil. Grease it with butter and keep aside.
8. Add 2-3 tbsp milk powder and cocoa mixture in the syrup. (Do not add more mixture at a time otherwise it will not mix well).
9. Mix well vigorously. Keeping adding the dry mixture in small batches and mix.
10. The consistency of the mixture should be thick without lumps.
11. Thick flowing consistency.
12. Pour the chocolaty mixture in the grease plate and sprinkle melon seeds on top.
13. Keep aside to set properly.
14. Normally it takes 1/2 hour to set at room temperature. But, it can be kept in fridge to set.
15. When set properly cut in desired shapes.
16. Serve.
