Custard swan cookies

 Custard swan cookies 


These custard swan cookies are eggless, simple and melt in mouth cookies. These cookies are crispy and crunchy from outside and delicious and soft from inside. These cookies are prepared by mixing all purpose flour, butter, custard powder and sugar.  


Quick tips -

1. Butter should be unsalted and soft. It should not be melted.

2. For eyes used green cardamom seeds.

3. Time required to bake the cookies may vary from the type of oven. 


Ingredients -

1 cup + 5 tbsp maida/ all purpose flour

1/2 cup custard powder

1 cup unsalted butter (soft)

1/2 cup powdered sugar

1/2 tsp vanilla essence 


Method -

1. Take maida and custard powder in a bowl.


2. Mix well and keep aside.


3. Add butter and vanilla essence in a bowl. 


4. Whisk it to creamy texture. Add powdered sugar and mix well.


5. Add few tablespoon of maida custard powder mixture at a time in butter mixture. Mix well. 


6. Add all the maida custard powder mix and knead it to a soft smooth dough.


7. Dough should be soft and smooth.


8. 
Place little maida or custard powder on the back of the plate. Take a small ball from the dough and place it on the plate. 


9. Flatten it with the back of the flat small plate.


10. Cut it from top.


11. Then make 3 cuts. One large and two small.


12. Turn the large piece gently and give it a shape of neck. 


13. Take the swans and place it on the oven proof tray lined with foil.


14. Pre-heat oven at 180°C for 10 minutes. Place the tray inside the oven at the middle rack and bake for 18-19 minutes. 


15. Remove it from the oven. Initially they will be soft, especially from the center, so no worries that is perfect.


16. Let it cool on the wire rack. Cookies will harden. 


17. Custard swan cookies are ready.


18. Eat it immediately or can be stored in air tight container.
