Brown top millet is one of the rarest millets. It is also known as korralu. It is gluten free and vegan. Brown top millet is not only nutritious but very delicious also. It is rich source of natural fibre and essential nutrients. 

.

Brown top millet dosa is crispy and lip smacking dosa. 


Quick tip - 

1. Add very little water while grinding. It should be thick in consistency. Because, after fermentation consistency of the batter gets thin.

2. Increase the fermenting time to 10 hours during winters.

3. I fermented the batter overnight.

4. After every cooked dosa sprinkle water 2-3 times on the tawa and wipe it off with kitchen napkin, then pour the ladleful of batter on the tawa and spread it with back side of the ladle. Cook on slow flame. 

5. Incase some batter is left than place it in fridge.


Ingredients - 

1 cup brown top millet seeds

1/2 cup urad dal

1/2 cup poha/ beaten rice

To taste salt 


Method - 

1. Wash and soak urad dal for 5 hours.


2. Wash and soak brown top millet for 5 hours.


3. Wash and soak poha for 30 minutes. 


4. Add soaked and drained urad dal and poha in mixer jar.


5. Add water little by little and grind it to a fine paste. 


6. Remove grounded urad dal and poha in big bowl.


7. Add soaked and drained brown top millet in mixer jar.


8. Add water little by little and grind it to a fine paste. 


9. Remove grounded brown top millet in the same bowl.


10. Mix well with your hands. 


11. Batter is ready. 


12. Cover and keep aside to ferment for 8 hours or overnight.


13. Perfectly fermented. 


14. Mix well before making dosa.


15. Add salt. Mix well.


16. If required add water to adjust the consistency. (I did not add water. As this batter tends to get thinner after fermentation). Mix well before making dosa.


17. Heat tawa on slow flame. Pour a ladleful of batter on it and spread it in thin circle with the back of ladle. Cook on slow flame till top dries up.


18. Drizzle few drops of oil on the dosa.  Turn the flame to medium slow. It will become brown from beneath. 


19. Fold it.


20. Transfer to a serving plate and serve hot.
