Arbi tawa fry
Ingredients -
1/2 kg arbi
For stuffing -
4 onion
2-3 green chilli
10 garlic cloves
1 cup tomato puree/ 4 tomatoes puree
To taste salt
1 tsp Garm masala
1 tsp Coriander powder
1/2 tsp turmeric powder
1/2 tsp kashmiri red chilli powder
3-4 tbsp mustard oil
For tawa masala -
2 tsp chaat masala
1/2 tsp red chilli powder
1 tsp salt
1/2 tsp cumin powder
For serving -
1 tsp butter
2 tbsp ready masala mixture for stuffing
1 tsp ready tawa masala
1 tbsp lemon juice
Method -
1. Wash and peel arbi. Make slit lengthwise in the middle. Keep aside.
2. For frying - Fry arbi in small batches in medium hot oil till golden.
3. Remove from the oil and keep aside.
4. For tawa masala - Mix chaat masala, cumin powder, red chilli powder, salt in a bowl. Mix well. Tawa masala is ready.
5. For paste - Add onion, green chilli and garlic in mixer grinder.
6. Grind it to a coarse paste. Don't add water.
For stuffing mixture -
7. Heat oil in a wok. Add onion paste and fry till golden and cooked.
8. Cook for 4-5 minutes till all the moisture evaporates.
9. Add tomato puree. Mix and fry for 3-4 minute.
10. Add salt, garam masala, coriander powder, turmeric powder, kashmiri red chilli powder. Mix well.
11. Mix well.
12. Cover and cook till tomato puree is properly cooked.
13. Stir and cook till oil separates from the mixture or the mixture is properly cooked.
14. Switch off the flame. Masala mixture for stuffing is ready. Take it out in a bowl and let it cool.
15. Preparing for tawa fry -
Sprinkle ready tawa masala on the fried veggies. Mix well.
16. Stuff arbi with ready masala mixture. (At this stage stuffed arbi can be stored in fridge for 2-3 days).
17. For serving -
Heat butter on a griddle or wok. Place ready arbi on tawa. Add ready masala mixture on it.
18. Sprinkle tawa masala and mix. Switch off the flame. Add lemon juice and mix.
19. Transfer to a serving plate. Serve hot.
