Aam watermelon rind panna/ Watermelon rind mango panna
It is a refreshing, delightful and vegan summer cooler prepared from unripe mangoes and watermelon rind. It has a tangy sweet taste. It is blended with Indian spice powders which brings more flavour to the panna and helps in the digestion.
Quick tips -
1. Add sugar to taste.
2. Add spices to taste.
3. Store the concentrate in air tight bottle in fridge.
Ingredients :
1 kg raw mango
2 cup watermelon rind
1/2 cup or to taste sugar powder
1 tbsp or to taste salt
1 tbsp black salt
1 tsp roasted cumin powder
1 tsp fennel seeds powder
1 tsp grated ginger
Method :
1. Boil mangoes in pressure cooker on high flame for 4-5 whistles.
2. Drain the water and let it cool. Remove the skin.
3. Boil watermelon rind in pressure cooker for 3-4 whistles in high flame.
4. Drain the water and let it cool.
5. Add boiled watermelon rind, sugar, salt, black salt, cumin powder, fennel seed powder, grated ginger in bowl.
6. Mash it with hand blender till smooth puree.
7. Add pulp of boiled mangoes and mash with hand blender.
8. Mash watermelon rind and boiled mangoes till smooth puree.
9. Watermelon mango rind panna concentrate is ready.
10. For serving - add 2 tbsp of Watermelon rind panna puree in serving glass. Add chilled water and serve.
