Pineapple fried rice

 Pineapple fried rice 


Pineapple fried rice is a vegan, humble, delicious and mildly spiced exotic dish. It is a perfect combination of flavourful and nutritious ingredients to make a quick and easy one pot meal. It is both vegan and vegetarian friendly prepared by mixing  crunchy nuts, caramelized pineapple and boiled rice. 


Ingredients - 

2-3 cup Boiled Rice

1 cup chopped pineapple pieces

3-4 tbsp oil

1/2 tsp mustard seeds

1 tsp garlic minced

1 Onion finely chopped 

1/4 cup Cashewnuts

1/2 tsp black pepper powder

To taste Salt

1 tbsp red chili sauce 

1 tablespoon Soy sauce 


Method -

1. Heat oil in a wok. Add mustard seeds let it splutter for a second. Add garlic and onion. Stir fry till golden. 


2. Add cashews and fry them for 3-4 minutes till golden.


3. Add pineapple pieces. 


4. Stir fry pineapple pieces for 5-6 minutes.


5. Cook till the moisture dries up or till pineapple is caramelized.


6. 
Now add salt, black pepper and mix well.


7. Add soya sauce, red chili sauce and mix well. 


8. Mix well.


9. Add boiled rice and mix well with the rest of the ingredients. Cook for 4-5 minutes stirring in between. 


10. Mix well.


11. Switch off the flame and cover it for 10 minutes.


12. Pineapple fried rice is ready to serve. 


13. Transfer pineapple fried rice to a serving plate.


14. Serve as it is or  with raita of your choice.

Chana dal khichdi

 Chana dal khichdi 


Quick recipe tips -

1. Add spices according to taste.

2. Wash and soak rice and chana dal for 1/2 hour. 


Ingredients -

1 cup rice washed and soaked for 1/2 hr....then drain 

1/2+1/4 cup chana dal  washed and soaked for 1/2 hr...then drain.

Other ingredients -

2 onion large chopped

3 tomato chopped

1/2 tsp cumin seeds/ jeera

1/2 tsp mustard seeds

To taste salt

To taste red chilli powder

1 tbsp sambhar masala

1/2 tsp turmeric powder

1 tsp red chilli flakes

2 tbsp lemon juice

2 dry red chilli 

4 tbsp cooking oil

2-1/2 cup water 


Method : 

1. Heat oil in cooker. Add dry red chillies, mustard seeds and jeera. Let it splutter for a second. Add onion. 


2. Fry till golden on medium slow flame.


3. Add tomatoes and mix well. 


4. Add salt, red chilli powder, sambhar powder, turmeric powder, red chilli flakes and mix well.


5. Cook on slow flame till tomatoes are soft and properly cooked.


6. Drain soaked rice and chana dal.


7. Add drained rice and chana dal in the pressure cooker and mix well. 


8. Add water and mix well. Cover the cooker and cook on high flame till 2 whistles. Switch off the flame. Let it cool. 


9. Open the lid add lemon juice and mix. 


10. Transfer chana dal khichdi in serving bowl. 


11. Serve hot with raita.

Tomato Rice/ Thakkali Sadam

 Tomato Rice/ Thakkali Sadam 


Tomato rice is an easy, quick, flavourful one pot meal. 

.

Quick tips -

1. Adjust spices according to taste.


Ingredients :

5-6 tbsp oil

1 chopped green chilli

1 tsp Mustard seeds

2 chopped Onions

1 tbsp Urad dal

1 tbsp Chana dal

2 tbsp thinly chopped fresh coconut

8 cashews chopped

2 cups tomato puree/ 4-5 Tomatoes  pureed

Salt to taste

To taste Red chilli powder 

1/2 tsp Turmeric powder 

1 tsp Sambhar masala powder

5 cups boiled rice 


Method : 

1. In a wok heat oil. Add mustard seeds and green chilli. Let it sizzle for few second. Add onions. Fry till translucent.


2. Add urad dal and chana dal. Fry fir 2-3 minute.


3. Add fresh coconut and cashews. Fry for few minutes.


4. Cook on slow flame for 2-3 minutes.


5. Now add tomato puree and cook for 10 minute on slow flame. 


6. Add turmeric powder,  salt, red chilli powder, sambhar masala powder and mix well. 


7. Cover and cook on slow flame. Stir in between. 


8. 
All the water will evaporate. 


9. Tomato puree is cooked properly.


10. Now add boiled rice. 


11. Mix well on slow flame. 


12. Transfer it to a serving bowl and garnish with fried cashews. 


13. Serve hot with raita and coconut chutney or eat it as it is.

Arhar Dal Khichdi

 Arhar Dal Khichdi


Ingredients -
1 cup Arhar Dal
1 cup Rice
4 tbsp Oil/ Ghee
1 tsp Cumin seeds
1 Onion chopped
1 tbsp or to taste Salt
1/2 tsp Red chilli powder
1/2 tsp Turmeric powder
1/2 tsp Dalchini powder
1 tbsp Sambar masala
3-1/2 cups Water

Method -
1. Mix arhar dal and rice in a bowl. Wash and soak for 30 minutes. Drain and keep aside.
2. Heat oil/ ghee in a pressure cooker. Add cumin seeds and let it sizzle for a second.
3. Add onion and fry on medium flame till translucent.
4. Add drained rice dal. Mix well.
5. Add water and mix.
6. Add salt, red chilli powder, turmeric powder, dalchini powder and sambar masala.
7. Mix well and cook on high flame.
8. Cover the pressure cooker and cook on high flame for 4 whistles.
9. Switch off the flame and let it cool.
10. Transfer it to a serving bowl and serve hot with pickle or curd.
