Quinoa uttapam
Quinoa uttapam is thick, fluffy and soft pancakes which is prepared by using quinoa flour, veggies and flavoured spices. It is a healthier version of uttapam. Quinoa is gluten free, high in fiber, high in minerals and a lot of protein. Moreover it is fully loaded with many important nutrients.
Quick tips for making quinoa flour
1. Incase 'quinoa' is not pre-rinsed then rinse quinoa with water and sun-dry it completely. Then dry roast it in a wok. Let it cool. Grind it. Quinoa flour is ready.

Ingredients -
1 cup quinoa flour
To taste salt
Pinch red chilli powder
1/4 tsp black pepper powder
1/2 tsp roasted cumin powder
1/4 tsp cinnamon powder
1 cup water
1 grated carrot
1 tsp grated ginger
1 tomato finely chopped
1 onion finely chopped
4 tbsp coriander leaves chopped
Method -
In a bowl mix quinoa flour, salt, red chilli powder, cumin powder, cinnamon powder and curd.
2. Add water and mix well. Mix well to a smooth batter.
3. Add carrots, onion, tomato, ginger, coriander leaves. Mix well and keep aside for 1/2 hour.
4. Heat tawa on slow flame. Pour ladleful of batter on tawa. Spread it with the back of the ladle.
5. Cook on slow flame till top dries up. Flip the side and drizzle few drops of oil if required.
6. Cook both sides till golden and crisp. Quinoa uttapam is ready.
