Watermelon rind halwa

 Watermelon rind halwa 


Watermelon rind halwa is simple, easy and delicious dessert. This amazingly lip smacking dessert is prepared by using rind/ white portion of  watermelon which is usually thrown away. Watermelon is 92% water and is low calorie fruit. It is very hydrating and full of Vitamin A and C. Not only watermelon but rind of watermelon is also more nutritious than fruit. 

Quick tip -

1. Adjust sugar to taste. 


Ingredients - 

4 cups grated watermelon rind (white portion of watermelon)

4-5 tbsp cooking oil/ butter/ ghee

2 tbsp cashewnut coarsely grind/ powder

1-2 tbsp cinnamon powder

1/4 tsp red food colour (optional)

1 tsp vanilla essence

1/2 cup coconut powder 


Method - 

1. Peel the green portion of the watermelon rind. 


2. Grate it in a bowl.


3. Coarsely grind the cashews.


4. Heat oil in a wok. Add cashewnuts. 


5. F
ry till light golden on slow flame. 


6. 
Add grated watermelon rind and fry on high flame.


7. Add cinnamon powder and mix well. 


8. The water from the watermelon rind leeches out. Let it dry up by stirring in between on high flame.


9. When the water dries up switch the flame on slow and add sugar in it. Mix well. 


10. Cook for 5 mins on high flame. Sugar will melt.


11. Add red food colour and mix well. 


12. Cover and cook on slow flame stirring in between. Add vanilla esence and mix well. Again cover and cook on slow flame stirring in between.

When the syrup/water dries up a little add coconut powder and mix well.

Cover and keep cooking on slow flame for 10-15 minutes stirring in between.

When the syrup/ water dries up completely and watermelon rind is soft,  halwa is ready. Switch off the flame. 


16. Transfer Watermelon rind halwa to a serving plate. Serve.

Gur ki lapsi/ Sweet dalia

 Gur ki lapsi/ Sweet dalia 


Gur ki lapsi is a sweet dessert prepared with roasted dalia, mixed with jaggery, cardamom powder, kesar and almonds. 

.

Quick tip -

1. Use any nuts of your choice.

2. Adjust jaggery according to taste.


Ingredients - 

1 cup dalia/ broken wheat

2 tbsp almonds chopped

1 tsp cardamom powder

Few strands of kesar

1/2 cup powdered jaggery

2 cup water

3 tbsp unsalted butter 

Method -

1. In a pressure cooker add butter. Let it melt on slow flame. Add dalia and roast it till golden on slow flame. Stir continuously. 


2. Add almonds and roast for 2 minute on slow flame. Stir continuously.


3. Add jaggery, cardamom powder, kesar and mix well.


4. Add water and mix well.


5. Close the lid and cook on high flame for 3 whistles. Switch off the flame. Let it cool completely.


6. Open the lid and mix well. Gur ki lapsi is ready. 


7. Transfer to a serving bowl. 


8. 
Garnish with chopped almonds and serve.

Wheat flour chocolate chip muffins

 Wheat flour chocolate chip muffins 

Makes : 12 muffins 


Dry ingredients : 

Wheat flour : 1 cup

Baking soda : 1/2 tsp

Salt a pinch 

Wet ingredients :

Sugar : 1/2 cup or to taste

Water : 1/2 cup

Strawberry jam : 1 tbsp

Cooking oil : 3 tbsp

Lime juice : 1/2 tbsp

Vanilla essence : 1 tsp 

Ingredients for topping :

Chocolate chips : 2 tbsp 


Method : 

1. In a bowl mix wheat flour, baking soda and salt. Mix well and keep aside.

2. In another microwave safe bowl add sugar and water. Place it in microwave and warm it by press start. Mix well.

3. Add strawberry jam in the warm water and again place the bowl in microwave and press start. Warm it till everything is dissolved. If few strawberry jam chunks remain it is ok, no need to worry.


4. Add in oil, vanilla essence and lime juice. Mix well and cool it a little.

5. Add this water jam mixture in the wheat flour mix. Mix well without any lumps. 

6. Preheat oven to 180*C for 10 mins. Grease the silicone muffin mold. Pour a tablespoon full of batter in each molds.


7. 
Sprinkle chocolate chips on the top of each muffin.

8. Bake in the oven for 25 min.

9. Take it out of the oven and let it cool.

10. Take muffins out of the each mold and place in a serving plate. 


11. Serve with a glass of warm milk.

Kesar paneer ladoo/ paneer malai ladoo

 Kesar paneer ladoo/ paneer malai ladoo 


Kesar paneer ladoo is quick, easy and delicious ladoos. This recipe is prepared by curdling the milk at home. It has a rich, creamy, smooth texture and anybody can make it quickly. 


Ingredients -
Double toned milk : 3 pkts or  (1500 ml) or (1-1/2 ltr)
Whipping cream : 200 ml
Lemon juice : 4-5 tbsp
Kesar few strands
Elaichi powder : 1 tsp
Rose water : 1 tbsp
Powder Sugar : 1/2 cup or to taste
Raisins : 3 tbsp
Almonds : 3 tbsp chopped 

Method : 

1. Take milk in a heavy bottom pan. Mix whipping cream. Boil milk on medium flame. Slow the flame. Add lemon juice and mix. When milk curdles slow the flame and let it cook for 5 min. Switch off the flame. 

2. Drain paneer, leave behind 1/2 cup water in the paneer. 

3. Now cook on slow flame stirring occassionaly till the water dries up completely. Switch off the flame.

4. Now add elaichi powder, kesar and rose water. Mix well. Let it cool completely.

5. Now add powdered sugar and nuts, mix well using your hands. 

6. Grease hands with little oil and make into small ladoos. 

7. Grease the plate and place ladoos in it. Keep it in a fridge for 1 hr.


8. Kesar paneer ladoo are ready to eat.
