Watermelon rind halwa
Watermelon rind halwa is simple, easy and delicious dessert. This amazingly lip smacking dessert is prepared by using rind/ white portion of watermelon which is usually thrown away. Watermelon is 92% water and is low calorie fruit. It is very hydrating and full of Vitamin A and C. Not only watermelon but rind of watermelon is also more nutritious than fruit.
Quick tip -
1. Adjust sugar to taste.
Ingredients -
4 cups grated watermelon rind (white portion of watermelon)
4-5 tbsp cooking oil/ butter/ ghee
2 tbsp cashewnut coarsely grind/ powder
1-2 tbsp cinnamon powder
1/4 tsp red food colour (optional)
1 tsp vanilla essence
1/2 cup coconut powder
Method -
1. Peel the green portion of the watermelon rind.
2. Grate it in a bowl.
3. Coarsely grind the cashews.
4. Heat oil in a wok. Add cashewnuts.
5. Fry till light golden on slow flame.
6. Add grated watermelon rind and fry on high flame.
7. Add cinnamon powder and mix well.
8. The water from the watermelon rind leeches out. Let it dry up by stirring in between on high flame.
9. When the water dries up switch the flame on slow and add sugar in it. Mix well.
10. Cook for 5 mins on high flame. Sugar will melt.
11. Add red food colour and mix well.
12. Cover and cook on slow flame stirring in between. Add vanilla esence and mix well. Again cover and cook on slow flame stirring in between.
13. When the syrup/water dries up a little add coconut powder and mix well.
14. Cover and keep cooking on slow flame for 10-15 minutes stirring in between.
15. When the syrup/ water dries up completely and watermelon rind is soft, halwa is ready. Switch off the flame.
16. Transfer Watermelon rind halwa to a serving plate. Serve.
