Achari baingan bharta
Achari baingan bharta is loved by everyone because of it's simplicity and taste. It is a popular Punjabi cuisine. It is prepared by roasting baingan on direct flame which infuses the dish with smoky flavour and then roasted baingan is tossed with flavoured spices.
Quick tips -
1. Adjust spices to taste.
Ingredients -
1/2 kg brinjal/ bharta baingan
1/2 tsp cumin seeds
1 onion chopped
1/2 cup tomato puree
1 tsp ginger garlic paste
1-2 green chilli grated
To taste salt
1/2 tsp red chilli powder
1/2 tsp cumin powder
1/2 tsp coriander powder
3-4 tbsp coriander leaves chopped
1 tsp achari masala/ pickle masala
2-3 tbsp mango pickle oil
Method -
1. Wash and clean wipe brinjal with kitchen towel and place it direct on high flame.
2. Keep turning it often until it is completely roasted.
3. Once it is completely roasted remove it from flame and place it in bowl of cold water for 5 minutes.
4. Remove it from water.
5. Peel of the skin.
6. Mash it with spoon or by hands.
7. Heat pickle oil in a wok. Slow the flame. Add cumin seeds, ginger garlic paste and onion.
8. Add green chilli and fry on medium slow flame. Stir in between.
9. Add tomato puree. Mix well.
10. Add salt, red chilli powder, coriander powder, cumin powder and achari masala.
11. Mix well and cook on slow flame till tomato puree is properly cooked. Stir in between.
12. Cook for 4-5 minutes on slow flame.
13. Add mashed brinjal.
14. Mix well for 2-3 minutes.
15. Cover and let it cook for 5-10 minutes on slow flame. Stir in between.
16. Open the lid and mix well. Switch off the flame. Achari baingan bharta is ready.
17. Transfer to a serving bowl. Mix coriander leaves. Sprinkle sesame seeds and onion on top.
18. Serve hot with chapati.
