Bread halwa

 Bread halwa 


Bread halwa is quick, easy, simple and lip smacking dessert. It is prepared by roasting bread crumbs in butter and then mixing with sugar and water. Bread halwa can be served as a dessert or can be consumed as a sweet snack. 


Recipe notes -

1. I have used Nutralite butter. Instead, ghee can be used.

2. I have used store bought white bread crumbs. 

3. I have leftover brown bread sides with me. I used that in this recipe.

4. Add sugar to taste.

5. Add dry fruits according to your preference. 


Ingredients -

2 tbsp + 1 tbsp butter

1 cup leftover bread sides

1 cup bread crumbs 

2 tbsp almonds chopped/ sliced

2 tbsp cashews chopped/ sliced

1 tsp cardamom powder

1/2 cup sugar

1-1/2 cup water

2 tbsp milk powder 


Method - 

1. Take leftover bread sides in mixer jar. 


2. Grind it to fine crumbs. Leftover bread sides crumbs are ready.  


3. Heat 2 tablespoon butter in a wok on slow flame. 


4. Add leftover bread sides crumbs and bread crumbs.  


5. Mix and fry on medium flame until golden. Keep stirring. Be careful it should not get burnt. Slow the flame. 


6. Add cardamom powder, almonds and cashews. Mix well. 


7. Add sugar and mix. 


8. Cook on slow flame for 2-3 minutes. 


9. Add water and mix. Cook on slow flame for 2-3 minutes or until water is absorbed by the bread crumbs. 


10. Add 1 tablespoon butter and mix. 


11. Add milk powder and mix well. 


12. Cook on slow flame for 2 minutes. Stir continuously. Switch off the flame. 


13. Cover and keep aside for 5 minutes. 


14. After 5 minutes mix well. Bread halwa is ready. 


15. Add in serving plate and garnish with chopped nuts.  


16. Serve it hot or chilled. Both ways it tastes delicious.

Mango chia pudding

Mango chia pudding  


Mango chia pudding is a simple, easy, healthy and delicious pudding. It is a perfect summer treat. It tastes yum when served chilled. 


Recipe notes -

1. I have used double toned milk bought from Verka milk plant, Mohali.

2. Add sweetener according to taste.  


Ingredients -

1-1/2 cup milk 

2-3 tbsp honey

3 tbsp chia seeds

1 tsp vanilla essence

1 mango finely chopped

For garnish - 

1-2 tbsp chopped mangoes

1 tbsp Pista chopped

1 tbsp melon seeds 


Method - 

1. In a bowl add milk, honey and vanilla essence. 


2. Mix well until honey dissolves properly. 


3. Add chia seeds and mix. 


4. Mix well. 


5. Cover and keep aside or in the fridge for 2- 3 hours until it blooms properly. 


6. After 3 hours it has bloomed perfectly. 


7. Take a serving glass. Add chopped mangoes at the bottom. 


8. Add pudding. 


9. Top with few chopped mango, pista and melon seeds. 


10. Mango chia pudding is ready. Serve chilled.

Honey chilli poha potato balls

 Honey chilli poha potato balls 


Honey chilli poha potato balls is a perfect dish goes well with fried rice and chow mein. It is a simple, healthy and quick recipe. This dish can also be consumed as an evening snack with coriander chutney. 

Quick recipe tip -

1. Adjust spices according to taste. 


Ingredients for balls -

1 cup poha

1 onion chopped

3 small potatoes boiled

1 tsp green chilli paste

1 tsp grated ginger

2 tbsp peanuts (roasted and crushed)

3 tbsp besan/ gram flour

1/2 tsp ajwain

To taste salt

1/2 tsp red chilli powder

1 tsp chat masala

3 tbsp coriander leaves 

For honey chilli sauce -

2 tsp sesame oil

1 tsp garlic minced

1 tsp ginger grated

1 tsp green chilli paste

1 onion chopped

1 capsicum chopped

To taste salt

1/2 tsp red chilli powder

1 tsp soya sauce

1 tsp white vinegar

1 tbsp tomato ketchup

1 tsp red chilli sauce

1 tbsp cornflour

1/4 cup + 1/2 cup water

2 tbsp honey

1 tsp sesame seeds 


Method -

1. Wash and rinse poha properly. No need to soak. Keep poha in the strainer for 10 minutes so that the extra water drains away. 


2. In a mixing bowl add onion, potato, green chilli paste, ginger, peanuts, besan, ajwain, salt, red chilli powder, chat masala and coriander leaves. Mix well. 


3. Add poha and mix everything well. 


4. Poha potato mixture is ready. 


5. Heat appam pan on slow flame. Drizzle little oil in appam holes. Make small balls from the poha potato mixture and place it in appam holes.

6. Cook on slow flame by flipping sides after few intervals. Cook properly on slow flame till golden and crisp. 


7. Poha potato balls are ready. 


For honey chilli sauce -

1. In a mixing bowl add soya sauce, vinegar, tomato ketchup, red chilli sauce and mix. Keep aside till use. 


2. In another bowl mix cornflour and water and keep aside. 


3. Heat oil in a wok on slow flame. Add garlic, ginger, green chilli paste, onion and fry till golden. 


4. Add capsicum, salt, red chilli powder and fry for 2 minute on slow flame. 


5. Add sauces mixture and mix well on slow flame. 


6. Add 1/2 cup water and mix. 


7. Add cornflour mixture and mix continuously on slow flame. 


8. Mix well.


9. Add sesame seeds, honey and mix well. 


10. Add Poha potato balls and mix well. 


11. Honey chilli poha potato balls are ready. 


12. Sprinkle coriander leaves on top and mix. 


13. Place it in a serving dish and serve hot.
