Cucumber raita Is a very simple and easy side dish to be made in summers. It is a very simple, quick and easy dish. Cucumber raita is very popular because of its cooling properties in the hot months. Some people squeeze out the water from the grated cucumber but I do not squeeze out the water and directly add the grated cucumber along with coriander leaves to the whisked curd. It is served as a side accompaniment with the main course.
Cucumber Raita/ Kheera raita
Ingredients -
2 cucumber (washed, peeled & grated)
1/2 ltr curd
3-4 tbsp coriander leaves chopped
1 tbsp salt
1/2 tsp cumin powder
1/2 tsp raita masala
1/2 tsp red chilli powder
Method -
Wash, peel & grate cucumber. Keep aside.
Cucumber Raita/ Kheera raita
Take curd in a bowl and whisk properly.
Add cucumber and mix well.
Add coriander leaves and mix well.
Add salt, cumin powder, raita masala and mix well.
Cucumber Raita/ Kheera raita
Transfer it to a serving bowl.
Sprinkel a pinch of cumin powder, raita powder and red chilli powder on top.

Serve.
