Chatpata chutney aloo/ Aloo chutney chaat/ potato chutney chaat 


Chatpata chutney aloo is a spicy, tangy, delicious and popular chaat from the streets of Kanpur. It can be served as an evening snack or can be eaten as side dish in lunch or dinner along with rice, ghavan or paratha. This chatpata aloo chaat is prepared by shallow frying potatoes and then combined with coriander or mint chutney and flavoured spices. 


Quick recipe tip -

1. Adjust spices to taste.

2. Boil potatoes, peel and cut into cubes. Cool completely before shallow frying.

3. Instead of coriander chutney... Mint chutney can be used 


Ingredients -

6-7 boiled potatoes

1/4 tsp turmeric powder

As needed oil for shallow frying

For coriander chutney - 

2 cup coriander leaves

2 tomato

1 onion

5 garlic cloves

1 inch piece ginger

1 tsp green chilli paste

2 tbsp coconut powder

1 tsp black salt

1/2 lemon juice

Other ingredients -

4 tbsp chutney

To taste salt

1/2 tsp chat masala

1 lemon juice 


Method for chutney -

1. In a mixer jar add tomato, onion, garlic, ginger, green chilli paste, coconut powder and lemon juice. 


2. Add coriander leaves. 


3. Grind it to a smooth paste without adding water. 


Method for chutney potatoes - 

1. Cut boiled potatoes in cubes. 


2. Heat oil in a pan for shallow frying potatoes. Add turmeric powder and mix.  


3. Shallow fry potatoes in hot oil till golden. 


4. Remove fried potatoes in a mixing bowl. 


5. Add chutney, salt, chat masala and lemon juice. 


6. Mix everything well. 


7. Transfer to a serving plate. Sprinkle sesame seeds on top. 


8. Serve immediately.

Potato basket chaat

 Potato basket chaat 


A very quick and easy snack packed with starch, Vitamin B6, C, fiber and proteins. 


Quick tips -

1. Adjust spices to taste.

2. Add filling according to your choice.


Ingredients for Potato basket -

5 big size boiled potatoes

3 tbsp mustard oil

To taste salt

1 tsp chat masala

Ingredients for Stir frying -

1/2 cup sprouted green moong dal

1/2 cup boiled black chana

2 tbsp oil

1 onion chopped 

1 green chillies

1/2 tsp cumin seeds

To taste salt

1/4 tsp red chili powder

1/2 tsp cumin powder

1 tsp chat masala

Pinch turmeric powder

1 tbsp tamarind paste

1/4 cup water

3 tbsp coriander leaves chopped

For serving -

As needed tomato ketchup

As needed mint chutney

2 tsp chat masala 


Method for Stir frying -

1. Heat oil in a wok. Add cumin seeds and let it splutter for a second. Add onion and green chilli. Fry till golden. 


2. Add sprouted green moong dal, boiled black chana, salt, red chili powder, cumin powder, chat masala and turmeric powder. Mix well. 


3. Add tamarind paste, water and mix on high flame. Keep stirring in-between.


4. 
Add coriander leaves and mix well on high flame. Water will evaporate. Switch off the flame. 


5. Stir fry chana moong is ready. Let it cool.


Method for potato basket -

1. Peel boiled potatoes and cut into half. 


2. Scoop out potatoes from the centre. Potato covers are ready.


3. Heat oil in the pan. Mix a pinch of turmeric powder with oil. Place potato jackets in the pan.


4. Sprinkle salt and chat masala on top of the potato covers. Keep cooking on medium low flame.


5. Turn the potato jackets upside down. Keep cooking for few minutes on medium low.


6. Again turn the side and keep cooking. Keep turning the sides until both sides are golden and crisp. 


7. Transfer golden and crisp potato jackets in the plate. 


8. Fill these potato jackets with stir fry chana moong.


9. Place potato baskets on serving tray. Add tomato ketchup, mint chutney and chat masala on it.


10. Potato basket chat is ready to serve.

 Aloo bonda chat/ Aloo bonda in appam pan 


Aloo bonda is a tasty deep fried high calorie snack which is transformed into healthy and low calorie snack by making them in appam pan. 

.

Quick tip -

1. Adjust spices according to taste.

2. Cook aloo bonda on slow flame only for proper cooking.

3. Batter should be of thick but flowing consistency. 


Ingredients for batter -

1 cup besan/ gram flour

To taste salt

Pinch red chilli powder

Pinch turmeric powder

As needed water 

Ingredients for stuffing -

7 boiled grated potatoes

1 tbsp grated ginger

2 grated green chilli

1 onion finely chopped

4 tbsp coriander leaves chopped

To taste salt

1/2 tsp red chilli powder

1/2 tsp turmeric powder

1/2 tsp coriander powder

1 tbsp chat masala

1 tbsp lemon juice 

For garnishing -

1 carrot grated

1 radish grated

As needed mint chutney

As needed tamarind chutney 

1 green chilli grated

1/4 tsp ginger grated

1 tsp chat masala 

Method for stuffing -

1. In a bowl mix potatoes, ginger, green chilli, onion, salt, red chilli powder, turmeric powder, coriander powder, chat masala, coriander leaves and lemon juice. Mix the stuffing very well. Keep aside till use. 


Method for batter -

2. In another bowl add besan, salt, red chilli powder, turmeric powder and water. Make smooth lump free batter.


Method for making aloo bonda -

3. Make small ball from the potato stuffing. Dip it the batter. Coat it well.


4. Heat oil in appam pan. Drizzle few drops of oil in appam pan. Add these coated potato balls in each cavity and cook on slow flame.


5. Keep changing the sides of the bonda for even cooking. Keep cooking on slow flame till both sides are golden.


6. Aloo bonda are ready.


For serving -

7. Transfer aloo bonda in the chat plate. Top with carrot, radish, mint chutney, tamarind chutney and sprinkle chat masala.

Hung curd tawa sandwich

 Hung curd tawa sandwich 


Sandwich is a quick versatile dish which can be served in breakfast and eaten as evening snack. It is a simple, easy and healthy dish which can be prepared in minutes. 

Quick recipe tip -

1. Adjust spices according to taste.

2. Instead of hung curd... greek yogurt or thick curd can also be used.

3. Add vegetables according to choice. 


Ingredients -

4 slices brown bread

1 cup hung curd

2 carrots grated

1 onion chopped

1 tomato chopped

1 capsicum chopped

1/2 cup coriander leaves chopped

To taste salt

1/2 tsp red chilli powder

As needed melted butter 

Method with step photos -

1. In a bowl add carrots, onion, tomato, capsicum, coriander leaves, salt and red chilli powder. Mix well.


2. Add hung curd and mix.


3. Mix everything well.


4. Take a bread slice. Spread a spoonful of mixture on the slice.


5. Cover it with another slice. Spread butter on both sides.


6. Place it on the hot tawa. Cook on slow flame till bottom side is brown. Then change the side.


7. Cook till both sides are brown and crispy.


8. Transfer to a serving plate. Serve hot with tomato ketchup.
