Aloo idli/ Potato idli

 Aloo idli/ Potato idli 


Aloo idli (Potato idli) is a quick,  healthy and tasty variation to the traditional idli. It is unique, soft, spongy and differently flavoured idli. 


Quick tips -

1. Take raw potatoes. Wash it, peel it and chop it.

2. Instead of eno... 1 tsp baking powder can be added. 


Ingredients for potato batter -

2 potatoes chopped

1 inch ginger 

2 tbsp water

For mixing - 

1 cup suji

To taste salt

1/2 cup curd

1/4 cup water

2 green chilli grated 

1 tsp chilli flakes

1 tsp sambar masala powder

3- 4 tbsp coriander leaves chopped

1 small packet (1 tsp) Eno

1 tbsp water

For tempering -

2 tsp cooking oil

1 tsp white urad dal

1/2 tsp chana dal

1 tsp mustard seeds 


Method - 

1. Take a mixer jar. Add peeled  chopped potatoes, ginger and water. 


2. Grind it to a smooth batter. 


3. Take a mixing bowl. Add suji, salt and curd. Mix. 


4. Add potato batter and mix. 


5. Add 1/4 water and mix well. 


6. Cover and keep aside for 15- 20 minutes. 


7. In a small pan heat oil. Add urad dal, chana dal, mustard seeds and let it splutter for a second. Switch off the flame and let it cool completely. Tempering is ready. 

8. After 20 minutes add tempering on the batter. Add green chilli, chilli flakes, sambar masala powder and coriander leaves. Mix well. 


9. Mix well.


10. Before steaming the idli add eno and 1 tbsp water. Mix well. Batter will become frothy. 


11. Mix.


12. Grease idli moulds properly. Heat little water in the idli cooker. Pour batter in the greased  idli moulds. 


13. Place idli stand in the cooker and cover it with lid.  Steam for 15 minutes on high flame. Switch off the flame and let it sit for 5 minutes. 


14. Open the lid. Perfectly steamed idlis. 


15. Remove the idlies out from the moulds. 

16. Place it in the bowl. 


17Transfer to a serving plate. 


18. 
Serve with sambar and chutney.

Instant suji dosa/ Instant semolina dosa

Instant suji dosa/ Instant semolina dosa 


Instant suji dosa is quick, easy and hassle free dosa. It requires no fermentation. This dosa is prepared by grinding suji to fine powder and then mixed with rice flour, wheat flour, curd and water. 


Recipe notes -

1. Grind suji to a fine powder.

2. Add little sour curd. 

3. Add baking soda before making dosa. 


Ingredients for dosa batter - 

1 cup suji/ semolina

2 tbsp rice flour

2 tbsp wheat flour

1/2 tsp sugar

To taste salt

1 cup curd

1 cup water

1/4 tsp baking soda

Ingredients for stuffing -

6-7 boiled potatoes

1 onion chopped

To taste salt

1/2 tsp red chilli powder

1/4 tsp turmeric powder

1/2 tsp carom seeds/ ajwain

1 tsp chat masala

3 tbsp coriander leaves chopped 


Method for stuffing -

1. In a mixing bowl add potatoes, onion, salt, red chilli powder, turmeric powder, carom seeds, chat masala and coriander leaves. 


2. Mix everything well. Stuffing is ready. 


Method for dosa - 

1. Add suji in mixer jar. 


2. Grind it to a fine powder. 


3. Remove suji powder in a mixing bowl. Add rice flour, wheat flour, sugar and salt. Mix well. 


4. Add curd and mix. 


5. Add water and mix well.  


6. Mix well to a smooth lump free batter. Cover and keep aside for 10-15 minutes. 


7. After 15 minutes add baking soda and mix well.  


8. Mix well. 


9. Heat dosa tawa on slow flame till hot. Wipe it with wet cloth. Pour a ladleful of dosa batter on the tawa and spread it with back of the ladle. Drizzle oil on sides. Cook on slow flame for 1-2 minutes. 

10. Cook on medium slow flame till golden and crispy.


11. Slow the flame. Place stuffing in the centre. 


12. Fold it from sides. 


13. Turn the side and cook on medium slow flame. 


14. Cook till both sides are golden and crispy.  


15. Instant suji dosa is ready. 


16. Transfer to a serving plate. Serve hot with chutney.

Green moong dal dosa

 Green moong dal dosa 


Moong dal dosa are healthy and nutritious crepes made from whole green moong dal. This dosa requires no fermentation. This dosa is prepared by soaking and grinding green moong dal along with green chilli, ginger, onion and coriander leaves. Then this batter is mixed with rice flour and besan. These dosas can be served with chutney or any sabzi.  


Ingredients -

1 cup sabut green moong dal

2 green chilli

1 tsp ginger

1 cup coriander leaves

1 tsp salt

1 onion 

1/4 cup water

1 tbsp rice flour

1 tbsp besan

1/2 tsp oil 


Method -

1. Wash green moong dal. Soak it in 2 cups of water for 2 hours. 


2. Drain it. Add soaked dal in air tight container and leave for 4 hours. 


3. After 4 hours you will see small sprouts on the dal. 


4. Take a mixer jar add green chilli, ginger, coriander leaves and onion. 


5. Grind it coarsely. Add sprouted moong dal. 


6. Add coriander leaves, salt and water little by little. Grind it to a smooth paste. 


7. Remove this paste in a bowl. Add rice flour and besan. Mix well. 

8. If needed add water to adjust the consistency of the batter. 

9. Heat tawa/ griddle on slow flame. When it is moderate hot, add ladleful of batter on it and spread. 


10. Drizzle few drops of oil. Cover and cook on medium slow flame for 2-3 minutes.  


11. Open the lid. Change the side and cook for 1-2 minutes. 


12. Cook until it is properly cooked from both sides. 


13. Green moong dal dosa is ready. Transfer to a serving plate and serve with chutney.
